Creative Guest Chef: St. Paddy’s Peppermint Patties from In Between Laundry

Today, I'm sharing a recipe for some yummy little morsels...{{St. Patty's Peppermint Patties}}with a secret ingredient: mashed potatoes Whoa. Hold on, sister. MASHED POTATOES?! You heard me.

I, for one, can't think of much that's more Irish than potatoes.

They taste even better than those other patties from the store that rhyme with Zork.
The mashed po-tay-tahs give them just the right texture.

You must try them.
 
Ingredients:
1 cup leftover mashed potatoes
2 T. melted butter
2 t. peppermint extract
10 cups powdered sugar
12 oz. semi-sweet chocolate chips
1 T. vegetable oil
In a bowl, combine the first 4 ingredients and mix well. You may need to add more sugar if your mixture is too runny--it should feel like a dough.
Scoop teaspoonfuls of the dough and shape into patties. Cover with plastic wrap and chill for a few hours.
Melt the chocolates with the oil and dip the chilled patties, covering completely. Chill until set.

Erin,
Big hugs to you for being here! Thanks for an innovative recipe - I love "Zorks" (hee-hee) but they're expensive when you can eat a whole bag in a sitting! I will be trying these! How long will they keep? I mean, unless I eat them all in one sitting? And should I refrigerate leftovers? Assuming there are any? Which there probably won't be?

You probably should refrigerate leftovers. Also, that's approximately how much sugar I used. You may want to use a little more or less-- it doesn't really matter as long as your dough is semi-stiff (able to roll in balls and keep their shape).

Potatoes????? That is so cool. I have a picky eater who does not eat veggies and I love sneaking something in there hat she doesn't know about. hee hee Thse look so good. Thanks.

Yum! The 'store' version of these are some of my favorite treats. I can not wait to try these out and it will be so cool to tell the people who try them that they have mashed potatoes in them! Haha! :)

QUESTION: When I mash my potatoes, I use butter and salt--is that o.k. or should I just make a special batch???
